Toasted S'mores Yogurt Protein Pudding
Evann RyanYou guys have shown SO much love to these protein pudding so it's my goal to keep adding epic flavours for you to enjoy while hitting your plant-based protein needs. Introducing Toasted S'mores Yogurt Pudding flavour.
This s'mores flavour takes just a touch longer to make then the other flavours because we've taken the extra step of toasting the marshmallows lightly in the oven. If you're short on time, or just prefer not toasted marshmallows then skip the oven and add them in as is!
Protein puddings or protein yogurt, whatever you want to call this, is one of my favourite go-to healthy snack or dessert options. When you use a really good protein powder to mix through the vegan yogurt, it can be a seamless blend and creaminess that just can't be beat. Especially because vegan yogurts tend to be lower in protein than regular dairy yogurts, so for vegans or dairy free people it can be tough to enjoy a yogurt bowl as a meal when it's lacking serious protein. With a scoop of protein whipped into your yogurt you're starting with a base of 20-30g of protein, and everything else you add is just fun!

What You'll Need to Make these Toasted S'mores Yogurt Puddings
Dairy free greek yogurt. I like the oat milk greek yogurt from Maison Riviera. However that is a Canadian brand, so use your favourite local brand!
Vanilla protein powder. I generally use one of two protein powders - Nuzest Clean Vegan Protein, or Vedge Nutrition Vanilla Ice Cream Protein. Both websites you can use my discount code: EVANNRYAN to shop and save!
Vegan graham crackers, or a similar kind of cookie.
Vegan marshmallows. I've only ever found and used the Dandies brand. They're great and no one would ever suspect they're vegan!
Dairy free chocolate chips or chopped chocolate. My go-to is Zazubean or Enjoy Life.

Substitutions
If you can't find a vegan greek yogurt, you can use regular vegan yogurt. It will be slightly less thick, but if you're concerned about that you can add a bit more protein powder until the base reaches your desired consistency.
In place of vanilla protein you could use chocolate for a richer base!
Can't find vegan graham crackers? Try any other preferred vegan cookie. Think maple flavour, or a shortbread style. It's cookies, it will still be delicious :)

Toasted S'mores Protein Pudding
Recipe makes 3 servings
Macros per serving:
338 cals - 10g fat - 44g carbs - 18g protein
Ingredients:
- 1 1/4 cup vegan greek yogurt
- 40g vanilla protein
- 6 vegan graham crackers, chopped
- 36 mini vegan marshmallows
- 2 tbsp chopped chocolate or chocolate chips
Instructions:
- Preheat the oven to 300 F and line a baking tray with parchment paper.
- Add the marshmallows to the prepared baking tray and bake for a 3-5 minutes. Just enough so that they're melting on top and lightly browning on the bottom.
- Remove from oven and allow to cool completely. Letting them cool completely makes removing them from the parchment paper super easy!
- Chop the toasted marshmallows if sticking together.
- To a mixing bowl add: vegan greek yogurt and vanilla protein powder.
- Whip together until you have a nice thick batter.
- Fold in the toasted marshmallows, chopped graham crackers and chocolate.
- Mix until just combined.
- Divide among three containers or bowls.
- Set in the fridge until ready to eat.
- Enjoy!
