
Vegan Apple Crisp (with Protein!)
Evann RyanI bet you've never meal prepped high protein vegan apple crisp before. But here's the thing I love to meal prep a sweet treat/dessert every single week. It's simply a part of my routine at this point. And even though having dessert in the house at all times might sound counterintuitive, it's quite honestly brilliant for helping you stay on your nutrition track.
Hear me out. If you know you have a sweet tooth, you know that every day around 3 pm you crave something sugary, or (personally) every night after dinner I need something sweet to say "your day of eating is over now, and it was delicious to the last bite." So if I don't meal prep myself something with healthier ingredients, maybe a little boost of protein and fibre like in this vegan apple crisp, I'm going to have the dessert that's less than ideal. Say.. a pint of ice cream, or a butter loaded cookie.
And, yes, of course. There is always room for the high sugar, high fat, bought it at my favourite bakery or ice cream shop dessert with absolutely zero protein and fibre. BUT if you stick with me and try to make that dessert habit part of the 20% of your diet, then the other 80% can look like vegan apple crisp every day of the week.

What You'll Need To Make This Vegan Apple Crisp
- Apples! Any colour or apple preference will do.
- Lemon juice. I like to keep a bottle of lemon juice in my fridge for cooking, baking, dressings, etc, because I find it easier, cheaper, and less wasteful than squeezing lemons for these recipes. There are a few on the market that are preservative and additive free, and contain only lemons, like this one.
- Extra virgin olive oil. This is to replace the usual butter found in apple crisp. I did this simply because vegan butters can have quite the mix of oils, and pure olive felt like a way to keep this apple crisp recipe "cleaner."

- Ceylon cinnamon. This is my preferred cinnamon but you can also go with Saigon cinnamon which is stronger in flavour.
- Oats, however my best recommendation is always sprouted oats. While you can use either variety, sprouting the oats gives you more nutrition per serving!
- Coconut sugar, or your preferred granulated sweetener. I like coconut sugar as it's easier on your blood sugar levels, while also having more trace minerals than brown sugar.

Substitutions
Instead of oil you can use vegan butter for a more traditional approach to this vegan apple crisp!
Coconut sugar can be replaced with brown sugar or your preferred granulated sweetener.
Replace the protein powder with all purpose or whole wheat flour.

Vegan Apple Crisp with Protein
Recipe makes 4 servings
Macros per serving:
335 cals - 15g fat - 38g carbs - 12g protein
Macros per serving with coconut whip topping:
436 cals - 20g fat - 46g carbs - 18g protein
Ingredients:
- 4 small apples (600g)
- 2 tbsp (30ml) lemon juice
- 2 tbsp (30ml) extra virgin olive oil
- 2 tbsp (24g) coconut sugar
- 1 scoop/serving Cinnamon Roll Protein Powder (code: EVANNRYAN to save) or your preferred vanilla protein
- 1 tbsp (7g) ceylon cinnamon (code: EVANNRYAN to save)
- 1/4 tsp (1g) salt
Topping:
- 1/2 cup sprouted oats
- 2 tbsp (24g) coconut sugar
- 1/2 scoop/serving Cinnamon Roll Protein Powder
- 1/2 tbsp (3g) cinnamon
- 1 1/2 tbsp (22.5ml) extra virgin olive oil
Option To Serve:
- 1 cup frozen coconut whip
- 1 scoop/serving cinnamon roll or vanilla protein powder
Instructions:
- Preheat the oven to 375 F and prepare 4 small oven safe meal prep containers, or a small 6x6 inch baking tray.
- Chop your apples into small cubes and add them to a mixing bowl.
- Add in lemon juice, olive oil, coconut sugar, protein powder, cinnamon, and salt.
- Mix everything together well.
- Pour the seasoned apples into your prepared containers or baking tray. Set aside.
- Using the same mixing bowl make your topping by adding all these ingredients together: oats, coconut sugar, protein powder, cinnamon, and oil. Mix together well. The mixture should resemble wet sand.
- Divide the mixture across the tops of the apples and spread from edge to edge.
- If you're using meal prep containers you can seal them and set in the fridge until you're ready to bake them off one at a time.
- For the small baking tray with all 4 servings in it, bake in the oven for 20-25 minutes or until apples are softened and crisp topping is nice and browned.
- To bake the individual containers, you can bake for roughly the same amount of time.
- To serve with coconut whip: Remove your coconut whip from the freezer 20 minutes before mixing with 1 scoop/serving vanilla protein powder. This will make it easier to whip the protein powder through.
- Set the coconut whip back in the freezer for at least 20 minutes to firm back up.
- When ready to eat your apple crisp, get your protein coconut whip topping from the freezer and serve on top of your hot vegan apple crisp!
