VEGAN COBB SALAD
This fresh summer salad packs not one but two sources of high quality plant-based protein! Crispy tempeh bac'un is the star of the show and adds depth and umami to the fresher ingredients like summer corn & tomatoes, crisp red onion, and to replace the usual hard boiled egg often seen in a cobb salad I've used cubed smoked tofu for an additional protein source. Everything gets dressed in a light dijon vinaigrette over fresh crunchy greens.Â

Recipe makes 4 servings

Ingredients, Tempeh Bac'un:
450g plain tempehÂ
1/4 cup soy sauceÂ
2 tbsp olive oilÂ
1 tbsp hot sauce
1 tbsp apple cider vinegarÂ
1 tbsp maple syrup
2 tsp smoked paprika
1/2 tsp salt

Cobb Salad:
1 cup corn kernelsÂ
2 tomatoes, choppedÂ
1/2 red onion, sliced thinÂ
1 brick smoked tofu, cubedÂ
8 cups lettuce

Dijon Vinaigrette:
1/4 cup extra virgin olive oilÂ
2 tbsp dijon mustard
2 tbsp maple syrup
3 tbsp red wine vinegar
1 tsp garlic powder or 1 clove fresh garlic
1/4 tsp saltÂ

Recipe, Tempeh Bac'un:
Break the tempeh into pieces. I like the tempeh pieces to be a variety of sizes so they cook slightly differently and allow for different textures, some softer and some crunchier (like bacon!). Set aside.
To a small bowl add all the bac'un seasonings. Whisk until combined.
Add the tempeh pieces and bac'un marinade to a pan and cook until tempeh has absorbed all the marinade and is browned and crispy.
Set aside.

Dressing:
Add all the dressing ingredients to a blender and blend until smooth.
Â
Salad:
Prepare all the vegetables listed into bite size pieces.

Plating
For meal prep:
If possible keep the dressing separate from the salads until ready to eat. If you need to pack the salad to go with you then add the dressing to the bottom of each container and build your salad on top. Shake vigorously when ready to eat to coat everything in the dressing.

For right away:
Plate everything and drizzle each with 1/4 of the dressing. Toss and enjoy!
