No-bake Peanut Blossom Cookies (with protein!)
Evann RyanThese tasty little bites, are just like the original peanut blossom cookie but no-bake, higher in protein, and packed with only good-for-you ingredients like natural peanut butter, a touch of maple syrup for natural sweetness, and almond flour, keeping them grain free and low carb too!
I've just entered my third trimester of pregnancy (yay!) and energy balls, homemade protein bars, and freezer treats like my homemade Rocky Road Protein Fudge has been fuelling me for my 2 am snack attacks, after dinner must have desserts, and everything in between. But pregnant or not, I find it incredibly useful to have homemade snacks like these on hand! It makes choosing the healthy option so much easier.
It also happens to be Canadian Thanksgiving today! So I made an extra batch to bring to my mother-in-laws house as a host gift. I'm telling you, everyone and their mother loves a peanut butter chocolate combo.

What You'll Need To Make These No-Bake Peanut Blossom Cookies
- All natural peanut butter.
- Almond flour. This keeps them lower in carbs and has a nice nutty taste.
- Maple syrup, or your preferred liquid sweetener.

- Salt. Because all sweet things need a pinch of salt!
- Chocolate! The original peanut blossom cookie calls for a Hersheys Kiss chocolate in the centre, but given that I can't find those vegan I opted for squares of my favourite chocolate bar (linked in recipe).

Substitutions
Peanut allergy? No problem, swap to almond butter, tahini, or cashew butter.
Although I personally love the nutty and sweet taste you get from almond flour, you can likely swap this to oat flour. Just start with a little less oat flour and build up from there, as oat flour is much drier than almond flour.

No-Bake Peanut Blossom Cookies
Recipe makes 14 cookies
Macros per cookie:
149 cals - 9g fat - 9g carbs - 8g protein
Ingredients:
- 1 cup (250g) peanut butter
- ⅔ cup (75g) almond flour
- 1 scoop/serving vanilla protein powder (discount code: EVANNRYAN)
- 2 tbsp (30ml) maple syrup
- ¼ tsp (1g) salt
- 50g chocolate (fave chocolate)
Instructions:
- To a mixing bowl add: peanut butter, almond flour, vanilla protein powder, maple syrup, and salt.
- Mix everything well forming a dough.
- Roll dough into 14 balls.
- Add the peanut balls to a plate and press a piece of chocolate into the centre.
- Add your peanut blossom energy balls to sealed container and keep in the fridge for the best texture!
