Strawberry Oatmeal Protein Bars

These strawberry oatmeal baked protein bars taste like a freshly baked protein bar in that they’re thick and dense while still being fresh and tart from the strawberries packed into every bite. I highly recommend enjoying them with some extra fresh strawberries on top! Balanced with fiber and protein this delicious bake can easily be customized with different add-ins. Try a different fruit, chocolate chips, nuts, seeds, or keep it plain!

Recipe makes 4 servings of Strawberry Oatmeal Protein Bars

Recipe notes:

The oats and hemp seeds have been blended to make for a more cake like square. You can keep the oats and hemp seeds whole if preferred.

Ingredients you need to make these Strawberry Oatmeal Protein Bars:

1 banana
1/4 cup date sugar (see recipe notes)
1/4 cup tahini
1/2 cup oat milk
1 tsp vanilla bean powder or extract

1 cup sprouted oats

1/4 cup hemp seeds

65g vanilla protein
1 tsp baking powder
1/4 tsp salt
1 cup strawberries

Recipe instruction:

  1. Preheat the oven to 350 F and line a small 6x6 inch pan, set aside.
  2. To a blender add: sprouted oats and hemp seeds.
  3. Blend until you have a fine flour.
  4. Pour the flour mixture into a bowl.
  5. Add all your wet ingredients to the blender: banana, date sugar, tahini, oat milk, and vanilla and blend until smooth. Pour the wet ingredients into a mixing bowl.
  6. Add to the wet ingredients: flour mixture (oats & hemp), vanilla protein, baking powder, and salt.
  7. Gently fold everything together until just combined.
  8. Fold in the strawberries.
  9. Pour the mixture into the prepared baking dish and bake for 16-18 minutes or until lightly browning around the edges. Allow to cool completely before slicing into 4 squares.
