| CURRIED EDAMAME SALAD |
This recipe is inspired by one of my favourite grab and go options at Whole Foods. I
love their crunchy broccoli salad with hints of cranberries and almonds, but theres is missing protein and uses heavy (vegan) mayo instead of the greek yogurt option I've suggested here. This version is lighter, more balanced, and in my humble opinion, tastes even better ;)
Recipe makes 4 servings
Macros per serving:
363 cals - 11g fat - 38g carbs - 28g protein
Ingredients:
500g bag frozen, shelled edamame (roughly 2 heaping cups)
2 cups broccoli, chopped into small florets
1/2 large carrot, peeled and grated
1/2 red onion, chopped
1/4 cup dried cranberries
1/4 cup chopped almonds
3/4 cup vegan greek yogurt
1 lime, juiced (should be 3-4 tbsp, if less you can add 1 tbsp vinegar to the dressing)
2 tbsp maple syrup
2 tbsp curry powder
1/4 tsp turmeric powder
1 tsp salt
Recipe:
Bring 6 cups of water to a boil.
Add in frozen edamame and set the timer to 5 minutes. When there is 2 minutes left (so 3 minutes has passed) add the broccoli to the boiling water as well. At 5 minutes, drain and edamame and broccoli and rinse with really cold water.
Set the edamame and broccoli aside to cool completely.
Prepare the vegetables: peel, grate and chop carrot, and chop the red onion.
Add to a large mixing bowl or salad bowl: prepared carrot, onion, edamame, broccoli, cranberries, and almonds. Toss well and set aside.
In a small bowl add: yogurt, lime juice, maple syrup, curry powder, turmeric powder, and salt. Whisk together until smooth.
Pour the dressing over the salad and mix well.
Divide the salad into 4 meal prep containers or keep in one large sealable container.
