Homemade Deli Sandwich

If you’re looking for meal prep lunch ideas to get back into the swing of things this fall then look no further than this homemade deli sandwich. Rich, salty, and a little bit sweet marinated tofu paired with a spicy dijon aioli, and peppery arugula piled high on Silver Hills sprouted grain bread.

 

Recipe makes 4 servings

Macros per serving:

407 cals - 19g fat - 34g carbs - 25g protein 

 

Ingredients:

350g extra firm tofu, sliced thin

1/3 cup dark soy sauce

2 tbsp regular soy sauce (I use liquid aminos)

3 tbsp red wine vinegar 

1/2 tsp garlic powder

1/2 tsp onion powder

1 tbsp coconut sugar 

 

8 slices Silver Hills Queen's Khorasan Bread

2 tbsp vegan mayo

2 tbsp dijon mustard

2 cups arugula 

 

Recipe:

Thinly slice the tofu and set aside.

To a sealable container add: dark soy sauce, soy sauce, red wine vinegar, garlic powder, onion powder, and coconut sugar. Whisk to combine.

Add the thinly sliced tofu to the container and seal it with a lid.

Shake the tofu container well, making sure each piece gets coated in the marinade.

Set the tofu in the fridge to marinate, at least 30 minutes but up to overnight.

Bring a non-stick pan to medium heat and add tofu.

Cook until browned and crispy.

Remove from pan and allow to cool.

Add the dijon mustard and mayo to a small bowl and whisk to combine.

Lay the bread down and spread the dijon/mayo mixture across four slices.

Top each piece with 1/4 cooked tofu deli meat.

Add arugula to each sandwich.

Seal with the other slice of bread. 

Cut each sandwich in half if desired and place in tightly sealed meal prep containers.

Enjoy fresh, protein packed sandwiches all week long!
