Chocolate Crunch Protein Bars

Made with low carb cereal, and zero added sugar chocolate, these crunchy and satisfying bars are healthy enough for a snack but decadent enough for dessert!

Recipe makes 12 servings

Macros per serving:

222 cals - 14g fat - 14g carbs - 10g protein 

 

Ingredients:

1 cup chopped chocolate or chips, I used 2 x 80g Zazubean Zero Sugar Bars

1/2 cup natural peanut butter

1 scoop Vedge Nutrition Peanut Butter Chocolate Protein (affiliate discount link!)

2 1/2 cups Catalina Crunch Chocolate Cereal, could sub another high protein cereal or regular cereal for less protein

1 tsp coarse sea salt, optional 

 

Recipe:

Line a loaf pan or small 6 x 6 inch pan with parchment paper.

Add the chocolate to a large sauce pot and melt on low heat, stirring constantly. 

Once chocolate is melted remove from heat and add peanut butter. Stir the peanut butter through the melted chocolate until they're fully blended.

Add in protein powder and gently fold through until fully combined.

Add in cereal and fold through until fully combined.

Pour the mixture into the prepared pan. Using the back of a spoon gently press the the bar down and flat across the top. Add a sprinkle of coarse sea salt across the top to finish.

Set in the fridge to firm, 1-2 hrs.

Once firm, remove from the fridge and set on the counter to reach room temperature before slicing into bars.

Keep bars in a sealed container on the counter or in the fridge.
