
Freezer Protein Fudge
Evann RyanThis simple, low sugar, high protein, freezer protein fudge can be customized in so many different ways and has the best texture and flavour! Today I went with a classic Rocky Road flavour which has the added crunch of almonds, chew of dried cranberries, and gooey soft texture from chopped vegan marshmallows. It has to be one of my favourite ice cream flavours but now made into this freezer protein fudge with benefits!
I am a firm believer that those with a sweet tooth must have a freezer stash of healthy treats. I keep homemade protein bars in there, cookie dough, energy balls, and protein freezer fudge stocked at all times. It's the perfect way to curb your sweet tooth with better-for-you desserts! What You'll Need To Make This Protein Fudge
- Peanut butter, or a preferred nut or seed butter.
- Maple syrup, or your preferred liquid sweetener.
- Extra virgin olive oil, or melted coconut oil.

Substitutions
Use any preferred nut or seed butter.
Switch the chocolate protein powder to vanilla protein and skip the cocoa powder for a peanut butter forward fudge!

Rocky Road Freezer Fudge
Recipe makes 20 squares
Macros per square:
127 cals - 7g fat - 9g carbs - 6g protein
Ingredients:
- 1 cup (250g) peanut butter
- ⅓ cup (75ml) maple syrup
- ¼ cup (60ml) olive oil
- 2 scoops/serving chocolate protein powder (15% off protein - use code: EVANNRYAN)
- 2 tbsp (10g) cacao powder
- ¼ cup (30g) chopped almonds (15% off - use code: EVANNRYAN)
- ¼ cup (28g) vegan marshmallows, chopped
- ¼ cup (40g) dried cranberries, chopped
Instructions:
- To a mixing bowl add: peanut butter, maple syrup, olive oil, chocolate protein powder, and cacao powder. Mix well to combine.
- Fold in chopped almonds, cranberries, and marshmallows.
- Line a loaf pan with parchment paper and add your fudge mixture.
- Using a spoon flatten the fudge from edge to edge.
- Top with coarse sea salt if desired.
- Add the fudge to the freezer to firm up, 30 minutes - 1 hr. Then slice into 20 small squares, add them to a freezer safe container and keep in the freezer until you’re ready to snack!
