
Vegan Dirt Cake with Protein
Evann RyanIf you're not from North America there is a good chance you're wondering what the heck is dirt cake?! Which is a fair question, because the name doesn't exactly ring *delicious*...but LET ME TELL YOU it is not only incredibly delicious but something I grew up eating for my birthday and I totally looked forward to all year.
The original dirt cake recipe is made up of cream cheese, Oreos, whipped topping (think cool whip), and icing sugar. It's then topped with gummy worms to make it resemble dirt with worms. As a result, it's usually a cake made for children.
Today though, we're making this childhood favourite not only for adults, but wayyyy healthier and high enough in protein to replace a full meal. Also a great option for halloween because you can get fun with all the festive holiday toppings like I did with candy eyeballs. But don't be mistaken, you can eat this all year round.

What You'll Need To Make This Vegan Dirt Cake
- Plain coconut yogurt, or your preferred yogurt. Health tip: I always buy plain yogurts and sweeten them myself. Sweetened yogurts like vanilla, generally use less than quality sweeteners and often more than needed.

- Maple syrup, to add a touch of sweetness to the dirt cake mixture.
- Lemon juice. This is for a little added tang! Trust me, it's totally perfect.
- Chocolate cookies. You can use the original Oreo's for this recipe, or a healthier chocolate cookie alternative like I did, here.

Vegan Dirt Cake with Protein
Recipe makes two servings
Macros per serving:
421 cals - 17g fat - 36g carbs - 31g protein
Ingredients:
- 2 scoops/serving chocolate protein powder (discount code: EVANNRYAN)
- 2 cups plain coconut yogurt
- 1/4 cup cocoa powder (discount code: EVANNRYAN)
- 1 tbsp maple syrup
- 1 1/2 tbsp lemon juice
- 1/8 tsp salt
- 4 chocolate cookies/biscuits (30g)
- 10-20 candy eyeballs (optional for halloween!)
Instructions:
- To a mixing bowl add: chocolate protein, coconut yogurt, cocoa powder, maple syrup, lemon juice, and salt. Whip together until smooth.
- Divide the chocolate pudding across two containers and set aside.
- Add the cookies to a blender and pulse into a crumb.
- Spread the cookie crumb across the puddings.
- Top with candy eyeballs or gummy worms if desired!
- Enjoy!
