High Protein Pizza Rolls

Recipe makes 8 pizza rolls

Macros per roll:

149 cals - 5g fat - 14g carbs - 12g protein

 

Ingredients:

1 cup vegan greek yogurt, room temperature

1/2 cup vital wheat gluten 

1/2 cup all purpose flour

1 tsp baking powder

1/2 tsp salt

1/3 cup pizza sauce

65g or 1/3 brick of this vegan cheddar cheese, shredded

1/2 brick (100g) vegan pepperoni, sliced 

 

Recipe:

Preheat the oven to 375 F and line a baking small 8x8 inch baking dish with parchment paper. 

To a mixing bowl add: yogurt, vital wheat gluten, flour, baking powder, and salt.

Mix until a dough forms.

Lightly flour a clean surface and roll the dough ball onto it.

Gently kneading it into a smooth ball. You should only need to knead it a couple times.

Lightly flour a rolling pin and roll the dough into a rectangle. Roughly 6 inch x 12 inch.

Add the pizza sauce and spread it from edge to edge.

Spread the grated cheese and pepperoni slices evenly across the dough.

Starting from the long side (12 inch side) roll the dough into a long and tight log.

Slice into 8 and place the rolls into the prepared baking dish, swirl side up.

Bake for 24-30 minutes or until browned and crispy.

Allow to cool slightly before digging in.
