Low Carb Protein Rolls Ups, perfect holiday appetizer or snack!

Quick (personal) nutrition update


I've recently been trying to find ways to decrease my daily carbs, NOT because carbs aren't incredibly nutritious and important for your health, but simply because I personally found I was overeating them. I eat a lot, and love my bread, oats, sweets, and starchy veggies, but have found that I consume more of these and less of the healthy fats my body craves. 

So while I'm still very pro carb, I'm just finding a new way to balance my daily consumption of them so I can fit more healthy fats into my diet like nuts, seeds, olives, olive oil, avocado oil, flax, hemp, chia sees, avocado, etc! 

Remember - I'm sharing this because I like to always share as much as I can with you regarding vegan food, diet, fitness, and nutrition. This isn't to give you the idea to adjust your personal diet. But it could be a sign to look at your diet and check to make sure you're getting in enough healthy fats. Especially my fellow ladies, our hormones *thrive* with healthy fats.

 

Holiday Recipe or Snack

As for these yummy roll ups! These two bite protein roll ups are the perfect snack, small meal, or holiday appetizer. You can also customize them in so many different ways by using different cheeses, different chopped veggies, even a different deli slice! And with so many vegan options out there these days, the possibilities are quite literally endless.

I used Tofurky brand deli slices in hickory smoked, Violife plain cream cheese, and chopped bell peppers and chives for a really nice combo with a bit of bite from the chives.

 

Macros

Recipe made one long log that I cut into 10 roll ups

Macros per roll:

63 cals - 4g fat - 4g carbs - 4g protein 

 

Ingredients

1 pack Tofurky Deli Slices 

4 oz Violife plain cream cheese (1/2 pack), room temperature!

1/2 red bell pepper, diced

1/3 cup diced chives 

 

Recipe

Lay a piece of parchment down on a clean surface.

Layer the deli slices in three rows, five slices across.

Spread the room temperature cream cheese across the deli slices from edge to edge.

Sprinkle with diced bell pepper and chives.

Gently roll everything up starting from the bottom (longest side) to the top. Try to roll as tightly as possible.

Once rolled into a long log shape, use a knife or napkin to clean any excess ingredients off the parchment paper.

Once parchment is clean, roll the parchment around the log tightly. Seal the ends by twisting until sealed.

Set the parchment covered log into the fridge for a minimum of one hour to firm everything together.

*If this is for a party, you can totally make this a day in advance and just leave it rolled up until just before serving*

Once it's set, remove the parchment paper and slice in to 10 pieces. 

Set out for your guests, or seal the roll ups in a container and set in the fridge until ready to eat!

Roll ups should last in the fridge in a sealed container for up to 3 days.
