Peanut Butter Cup Protein Bowl

Peanut butter cups have long been my favourite candy bar. Salty and smooth peanuts combined with rich and creamy chocolate, there's just nothing quite like it. But I also know the real deal isn't really all that great for me, not to mention the vegan version is super hard to find!! So I have been flavouring my oats and desserts with this flavour for so long I don't even miss the original! This creamy protein bowl hits the craving every time.

 

Recipe makes 3 servings 

Macros per serving:

391 cals - 15g fat - 40g carbs - 24g protein 

 

Ingredients

500g plain vegan greek yogurt, I used this entire tub

6 tbsp peanut butter powder

1/4-1/2 tsp stevia, depending on how sweet you like it

1/4 cup vegan chocolate chips 

2 tbsp dairy free milk 

 

Recipe

To a mixing bowl add: yogurt, peanut butter powder and stevia. Whisk to combine.

Pour the mixture into three bowls or containers. Set aside.

Add the chocolate chips and the soy milk to a small pot and heat on low, stirring constantly. Once combine, immediately remove from heat.

Pour the chocolate sauce over the three yogurt bowls.

If desired you can use the back of a spoon to smooth the chocolate across each bowl. 

Top with sea salt.

Seal and refrigerate until ready to eat.
