Made with freshly grated zucchini, key lime juice and zest, whole wheat flour and vital wheat gluten for a protein boost! It's incredibly simple to make and offers the best, most moist and delicious zucchini bread without the use of eggs or dairy.

What You'll Need To Make This High Protein Zucchini Bread
- Fresh zucchini. Grated and dropped right into the batter.
- Coconut sugar, or your preferred granulated sweetener.

- Olive oil. This adds the perfect depth of rich, healthy fats.
- Key limes. You'll use both the juice and zest to add brightness to the zucchini bread.
- Whole wheat flour. I like Anitas organic, sprouted whole wheat for a nutritional boost. (Linked in recipe).
- Vital wheat gluten. This 1/2 cup measurement adds 46g of protein to the bread! It's also lower in carbs then regular whole wheat flour.
- Baking powder, baking soda, and salt.
- Icing sugar. This is essential to take this zucchini bread from simple to extra special.



Substitutions
In place of coconut sugar, use any preferred granulated sweetener.
You can substitute the olive oil for grapeseed oil or avocado oil.
Can't find key limes? Regular limes will do for this zesty zucchini bread recipe.
Instead of whole wheat flour you can use all purpose white flour or gluten free flour for this zucchini bread recipe. However keep in mind removing the vital wheat gluten will reduce the protein.

High Protein Zucchini Bread with Key Lime Glaze
Recipe makes 8 slices
Macros per slice:

Ingredients:
- 1 1/2 cups grated zucchini (roughly 1 large zucchini)
- 1/2 cup coconut sugar
- 1/2 cup aquafaba (brine from a can of chickpeas or white beans)
- 1/4 cup olive oil
- 2 tbsp key lime zest
- 2-3 tbsp key lime juice
- 1 cup sprouted whole wheat flour (or regular flour!)
- 1/2 cup vital wheat gluten
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
Ingredients, Key Lime Glaze:
- 1/4 cup icing sugar
- 1 tbsp key lime zest
- 2-3 tbsp key lime juice
Instructions:
- Preheat the oven to 375 F and prepare a loaf pan.
- Grate the zucchini and add it to a mixing bowl.
- Add to the mixing bowl: coconut sugar, aquafaba, olive oil, key lime zest and juice. Then whisk the wet ingredients together well.
- Add in whole wheat flour, vital wheat gluten, baking soda, baking powder, and salt. Gently fold everything together until just incorporated.
- Add the batter to a loaf pan and smooth the top from edge to edge.
- Bake for 24-28 minutes or until browning around the edges, and a toothpick comes out clean from the centre.
- Allow to cool completely before removing from the loaf pan.
- Make the glaze by adding the icing sugar to a small bowl with key lime zest, and 2 tbsp key lime juice. Mix together well. If you want a runnier consistency add another 1 tbsp key lime juice.
- Pour the key lime glaze over the cooled zucchini loaf. Use a spoon to smooth it from edge to edge so the entire top is covered in glaze.
- Set the zucchini loaf with key lime glaze in the fridge for 15-20 minutes so the glaze can fully set.
- Once the glaze is set, slice the bread into 8 thick slices.
- Seal in a quality glass meal prep container and keep in the fridge for optimal freshness for up to 5 days!
